Specialising in baby herbs, micro herbs were the reason behind Gourmet Herbs establishment in 2003. Known as the founder of micro herbs in Australia, we have proudly witnessed the use of these herbs soar across the country.
While micro herbs had already been discovered globally, they were yet a common staple on Australian shores. Bringing attention to micro herbs, we were the first to introduce this produce to the Australian market and culinary scene.
Micro herbs are often used as a garnish or an ingredient in a dish. They are small but full of flavour. Nowadays, they are commonly used in many dishes across Australia.

What are micro herbs?
Micro herbs, also known as baby herbs, are considered a younger version of the herbs you commonly find in the supermarket. These petite, flavour-packed greens have not only transformed culinary creations but also brought about a significant shift in how chefs approach ingredient selection, menu design and consumer preferences.
The visual appeal of micro herbs has revolutionised the way food is presented. These tiny greens bring a burst of colour, texture and elegance to plates, transforming even the simplest dish into a work of art.
Our discovery of micro herbs
It all began after our founder, Jane Vassallo, experimented and trailed micro-herbs in 1998. After growing fancy lettuce, Jane used her lineage of farmers and love of life on the farm to explore hydroponics on her family farm.
Back then, micro herbs were non-existent in the country. With no competition existing on the market, micro-herbs were a niche opportunity that was in demand for contemporary restaurants and other establishments. Jane set off to meet these supplier needs, officially establishing Gourmet Herbs in 2003.
After mastering the production of these herbs, Gourmet Herbs found their speciality – micro herbs. Dropping our initial fancy lettuce, we focused purely on growing the best quality micro-herbs.
Since then, micro-herbs popularity has soared. We have proudly led the micro-herb market, supplying countless businesses nationwide for nearly 20 years. Over time, we have broadened our range of micro-herbs, offering and producing over 23 herbs directly from our family-operated farm. This also includes edible flowers.
To this day, we are still the biggest supplier of micro-herbs in Australia.
What micro herbs we offer
When we first began growing micro-herbs, we started with an honest collection. What initially started as a one-woman operation, we catered to a few common herbs often required in most dishes. This consisted of classic herbs, including basil.
Through the years, our product range and business have both grown in size, transforming into a family-run business with all hands on deck.
At Gourmet Herbs, we pride ourselves on old-fashioned values. This means listening to our clients and understanding their wants. We have continued to work hard to produce only the highest quality products through our operation. This has resulted in us extending our range to meet the culinary needs of our clients.
As the specialist provider of baby herbs, we have expanded our collection of micro herbs due to client requests. We now proudly offer a vast range of baby herbs, including cut herbs, an assortment of Asian herbs and the popular basics.
Recently, we started to provide a range of edible flowers, including zucchini flowers and a range of violas.
